| Our Top-Filet is produced using the best five superior cuts (primals) that are the most tender but not including the Fan Filet. Displaying a rich dark crimson color, this BLUE FEATHER product rivals fine Beef steaks but is 98% fat free.
The ¼ lb. Burger Patties are formulated from the remaining steak and trim cuts. Please note that we do not use only trim in our patties. We straddle a fine line of being able to label these patties Steak Burgers. Our Ostrich Burgers taste terrific, are lean, healthy and not greasy.
The Fan-Filet is the most tender and flavorful cut of Ostrich meat.
Cooking and Preparation
Ostrich meat is best prepared medium rare 130ºF to medium 145 ºF (internal temperature). It can be marinated to keep it moist longer while cooking but it is not necessary. For best results Ostrich meat can be prepared in the same fashion that Beef is. Whether you choose the grill, the broiler or the pan, Ostrich cooks quickly and will continue to cook after it is removed from the heat source. The best Ostrich will always be pink in the middle (the pinker the better), the worst will be over-cooked and tough. Take the meat off early! Take the meat off early! Take the meat off early! There!
